A Cool, Refreshing Breakfast for Dinner?

Why sure!

Let me introduce the Breakfast Salad!



Eggs, bacon and toast on a bed of lettuce!

You can add anything you like to it.

We like our eggs, bacon and toast on either chopped Romaine or fresh Spinach leaves.

Our additional ingredients are usually green onions, tomatoes, cucumbers and avocados. Yum!

You could add some shredded cheese or even more meat, maybe some ham or turkey and your favorite salad dressing.  We like Honey Mustard or Ranch.

I always have hard boiled eggs in the fridge so the day we are having this for dinner I cook up some chopped bacon...

 
and slice up several pieces of bread to make the toast/croutons...


Easy peasy.

Chop up the veggies and viola... a tasty, satisfying and refreshing choice for dinner!

LOVE bacon, but generally opt for chicken instead. This tine of year salads are good nearly every day just because humidity and heat are up and cooking isn't much fun...
